Chocolate Cherry Pumpkin Muffins
The shift from summer to fall always has us reaching for pumpkin puree and turning on the oven. Pumpkin muffins are a classic this time of year, but we couldn’t resist giving them a cherry twist. This recipe is simple, cozy, and no-fuss; just whisk, stir, and bake. The result? Soft, perfectly spiced muffins with a little extra sweetness from chocolate and a bright pop of tart cherries that make them even better than the classic.
Ingredients:

½ cup vegetable oil

1 ¾ cup all-purpose flour

2 teaspoons pumpkin spice

1 teaspoon baking soda

½ teaspoon kosher salt

2 large eggs, room temperature

½ cup granulated sugar

½ cup light brown sugar

1 (15 oz.) can pumpkin puree

½ teaspoon vanilla extract

½ cup dark chocolate chips
Instructions:
- Preheat oven to 350 degrees.
- Grease or add muffin liners to muffin tin.
- Whisk flour, pumpkin spice, baking soda, and salt together in a large bowl.
- In a second large bowl, whisk together eggs, granulated sugar, and brown sugar.
- When combined, stir in the pumpkin puree, vegetable oil, and vanilla.
- Combine the wet mixture with the flour mixture.
- Fold Cherry Republic dried cherries and chocolate chips into batter.
- Scoop the batter into the prepared muffin tin.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
