Cherry Jam Thumbprint Cookies
There's something about thumbprint cookies that just feels like home. Soft, buttery and baked with care, these little treats are finished with a spoonful of your favorite Cherry Republic Jam. They're simple, cozy, and made for sharing, or keeping them all to yourself, we won't judge.
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 3/4 cup unsalted butter (1 1/2 sticks), softened
- 2/3 cup sugar, plus more for rolling
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/3 cup Cherry Republic Jam of choice
Instructions:
- Preheat oven to 350°F. Line baking sheet(s) with parchment paper.
- Whisk flour, baking powder and salt together in a bowl.
- In another bowl, whip butter and sugar with a mixer until fluffy. Beat in egg & vanilla. Mix in the dry ingredients in 2 additions.
- Scoop dough into 1" balls and roll in sugar. Place 2" apart on baking sheets. Press thumbprint into the center of each ball, about 1/2"deep. Fill each thumbprint with 3/4 tsp of jam.
- Bake cookies until the edges are golden, about 15 minutes
- Cool cookies on the baking sheets. Enjoy!
