  • 1/2 cup neutral oil

  • 2 eggs

  • 2 tsp vanilla

  1. Heat the oven to 350°F. Grease and line two 8-inch round cake pans.

  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the milk, oil, eggs, and vanilla, then mix until smooth. Stir in the hot coffee or hot water. The batter will be thin, and that is exactly right.

  3. Divide the batter evenly between the pans and bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out clean.  Let the cakes cool in the pans for about 10 minutes, then turn them out onto a rack and cool completely.

  4. Beat the cold heavy cream with the powdered sugar and vanilla until medium peaks form.

  5. Next, assemble the cake. Place one cake layer on a cake stand or serving plate. Spread a layer of whipped cream over the top, then spoon on a generous layer of ready-made Mamma Mary’s Cherry Pie Filling.
