Momma Mary’s Holiday Cherry Dressing


  • 1 stick butter
  • 2 cups diced onions
  • 2 cups diced celery
  • 1 TB minced sage
  • 1 TB minced thyme
  • 1 cup dried cherries
  • Salt and Pepper
  • 3 cups low sodium turkey or chicken broth
  • 2 eggs
  • 1/4 cups chopped parsley
  • 16 cups cubed crusty, stale bread
  • olive oil


Preheat oven to 350 degrees. If using as a side dish, butter or spray a 13” by 9” baking dish.

Melt 1 stick of butter in a large skillet over medium heat. Add 2 cups each diced onions and celery, and 1 tablespoon each minced sage and thyme; add salt and pepper (to taste) and cook 5 minutes. Add 3 cups broth and bring to a simmer. In a large bowl, beat 2 eggs, then add parsley. Add 16 cups of bread, then pour in the vegetable-broth mixture and dried cherries, and toss. Transfer to the baking dish and drizzle evenly with olive oil; or if using as stuffing for the bird, spoon into turkey to fill.

Cover the dish with foil and bake 30 minutes. Then uncover and bake until golden brown, 30 more minutes.
