Cherry Republic's PERFECT Cherry Pie


  • 2/3 c. sugar
  • 3 Tbsp. Minute or quick tapioca
  • 1/4 tsp. almond extract
  • 2 cans of Ruby Red Morsels of Joy, drained, reserving 1/2 cup
  • 2 crusts for a 9" pie
  • 1 Tbsp. butter, cubed


Preheat oven to 400° F.

In a bowl, toss together: sugar, tapioca, almond extract, ½ cup reserved cherry juice and cherries. Let sit for 15 minutes.

Pour into prepared pie crust, dot with butter, cover with second pie crust, seal and flute edge. Cut hole in center or several slits to let steam escape.

Bake 50-60 minutes or until juices form bubbles that burst slowly. Cool thoroughly before slicing.
